They are also “slimming” or “diet” foods if eaten without additives, such as butter, cream, oil etc. More leafy vegetables should be taken, as well as highly-coloured vegetables, such as carrots, tomatoes, beetroots etc, as these contain more vitamins and minerals and a minimum of carbohydrates.
A very widespread misconception prevalent amongst people of all classes is that only very expensive foods are nutritious, and that cheap and readily available foods are, conversely, poor in
Nutritive value.
Cooking of vegetables should be kept to the minimum. Raw salads are best; secondary options are steamed or baked vegetables in which case, care should be taken not to allow the vapors escape.
Soups are also nutritious, especially when all parts of the vegetables are used and none discarded. Water in which vegetables are cooked should never be thrown away even if it is in excess of one’s requirement. It can be stored and added to gravies, soups, curried vegetables etc.
Thus we can see how combinations of various foods are highly beneficial and sufficient to ensure a balanced diet. These 3 methods also go to prove that one need not necessarily take expensive foods for adequate.
